Lallemand Nottingham ale yeast is an extremely versatile English yeast strain that is capable of producing a wide variety of beer styles. It produces clean-tasting beers with low concentrations of fruitiness and estery aromas. The neutral flavor profile is excellent for emphasizing the natural flavors of the malt and hops. Nottingham yeast is also ideal for making lager-style beers at cooler temperatures. This strain has very good flocculation, high attenuation and a high tolerance to alcohol. Optimum temperature range: 50º – 72ºF (10º – 22ºC).
