Red Star Premier Blanc produces a vigorous fermentation and has a high tolerance to ethanol. It will ferment wines to dryness with little residual sugar and has a good tolerance to free sulfur dioxide. It is best suited to all white wines, some red wines and for fruit wines. It is somewhat flocculent yet not commonly used for sparkling wines. It is particularly useful for restarting stuck fermentations and ferments best between 59° – 86°F (15° – 30°C). Certified Kosher.
