Sodium Metabisulfite is a popular wine additive and sanitizer used to inhibit wild yeasts and bacteria in fresh fruit prior to fermentation. It is also used after fermentation for its anti-oxidant and preservative effects. In white wines, it preserve color and prevents oxidative browning. The addition of sulfites is considered to improve the overall flavor of wine and preserve its delicate qualities. When dissolved in water, it is also a safe and effective sanitizing solution for plastic, glass and metal surfaces.

– Use 2oz in 1 US gallon of water for use as a sanitizing solution
