Bentonite is a natural clay material that is used to clarify wine and remove excessive proteins. It has the ability to absorb and attract protein materials that cause cloudiness as it precipitates out of solution. Bentonite also improves the stability of the wine as it ages and prevents off-flavors from developing as a result of excessive proteins.

– Mix 2.5 tsp (12mL) in 2.5 cups (600mL) of hot water. Wait 24 hours and add to 5 US gallons (18.9L) of wine.
– It is important to mix the Bentonite solution thoroughly but gently in order to not agitate the wine.
– The wine can be stirred several times after adding the Bentonite solution to achieve maximum effect before it completely settles out of the wine.
– The effect of the Bentonite can be improved when the wine is chilled to 45F (7C).
– Bentonite does not clarify wines that are cloudy as a result of bacterial contamination or causes other than excessive protein.
