The Maris Otter Malt variety from England is highly regarded around the world as the best ale malt for its consistently flavorful character. It lends a deeper golden color and a fuller, slightly nutty character not found in modern pale malt varieties. This low protein and highly modified malt is considered the ideal by expert ale-brewers and is also particularly forgiving for home brewers during mashing.
