Swaen’s ‘PlatinumSwaen’ sauer barley malt is acidified with lactobacilli for increasing sourness, reducing mash pH, improving hydrolytic enzyme activity and acidifying brewing water with low residual alkalinity. It can be used in pilsners, ales, light beers, wheat beers or any style where desired at a rate of around 5% of the total grain bill.
